Viral lemon creamy zucchini orzo with crispy chicken sausage

- 1 cups orzo
- 2 cups chicken broth
- 1 lemon
- 1 cups parmesan
- 2 zucchinis
- 1/2 white onion or shallot
- 1 tbsp butter
- 2 tbsp olive oil
- garlic powder
- mild italian chicken sausage
Instructions
- Slice the chicken sausage and cook it with olive oil for 8 minutes on medium high heat, or until fully cooked.
- Sauté the zucchini with olive oil and garlic powder for 8 minutes on medium high heat.
- Remove zucchini from pan and set aside. Add chopped onion to the pan and sauté with olive oil for 2-3 minutes.
- Add 1 cup uncooked orzo to the pan with onions and 2 cups chicken broth. Cover and reduce heat to medium. Stir and let cook until the liquid is absorbed (about 7 minutes).
- Add 1 cup Parmesan, juice of 1 lemon, 1 tbsp butter, the cooked zucchini, and cooked chicken sausage to the creamy orzo. Mix and serve.
