  • 2 cups oats
  • ¼ cup slivered almonds
  • ¼ cup cashews
  • 1 tbsp chia seeds
  • 1 tsp ground cinnamon
  • ⅛ cup coconut oil
  • ⅛ cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 345°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together 2 cups oats, ¼ cup slivered almonds, ¼ cup cashews, 1 tablespoon chia seeds, and 1 teaspoon ground cinnamon.
  3. In a small saucepan, melt ⅛ cup coconut oil over low heat, then stir in ⅛ cup maple syrup and 1 teaspoon vanilla extract until combined.
  4. Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
  5. Spread the mixture in an even layer on the prepared baking sheet.
  6. Bake for 10 minutes, then remove from oven and stir to ensure even baking.
  7. Return to oven and bake for another 10 minutes.
  8. Check for golden brown color and bake for an additional 5 minutes if needed, watching closely to avoid burning.
  9. Remove from oven and let cool completely on the baking sheet to crisp up.
