- 2 cups oats
- ¼ cup slivered almonds
- ¼ cup cashews
- 1 tbsp chia seeds
- 1 tsp ground cinnamon
- ⅛ cup coconut oil
- ⅛ cup maple syrup
- 1 tsp vanilla extract
Instructions
- Preheat oven to 345°F and line a baking sheet with parchment paper.
- In a large bowl, mix together 2 cups oats, ¼ cup slivered almonds, ¼ cup cashews, 1 tablespoon chia seeds, and 1 teaspoon ground cinnamon.
- In a small saucepan, melt ⅛ cup coconut oil over low heat, then stir in ⅛ cup maple syrup and 1 teaspoon vanilla extract until combined.
- Pour the wet mixture over the dry ingredients and stir until everything is evenly coated.
- Spread the mixture in an even layer on the prepared baking sheet.
- Bake for 10 minutes, then remove from oven and stir to ensure even baking.
- Return to oven and bake for another 10 minutes.
- Check for golden brown color and bake for an additional 5 minutes if needed, watching closely to avoid burning.
- Remove from oven and let cool completely on the baking sheet to crisp up.
