Kimchi Jjigae

- 1/2 yellow onion
- 3 tsp minced garlic
- 4 oz thinly sliced beef brisket
- 2 shiitake mushrooms
- 1 cups cut kimchi
- 4 oz firm tofu
- 2 green onion
- 2 cups chicken bone broth
- 1/4 cups leftover kimchi juice
- 2 tsp brown sugar
- 2 tbsp gochugaru
- 2 tsp gochujang
- 1 tbsp soy sauce
- salt
- 1/3 spray oil
Instructions
- Slice your tofu into rectangles mushrooms
- Thinly dice your green onions and thinly slice your yellow onions
- In a small pot on medium‑high heat coated with spray oil, sauté the yellow onion and minced garlic. Add in your beef, cut kimchi, sliced mushrooms.
- Add in your bone broth, kimchi juice, brown sugar, gochugaru, gochujang, and soy sauce and bring it to a boil for a few minutes.
- Add in your sliced tofu topped with green onions and season with salt or add in extra kimchi juice to taste and enjoy!
