Cheesy Beef Enchilada Casserole
Layered with ground beef, tortillas, and a spicy enchilada sauce, this easy casserole bakes up bubbly and cheesy for a comforting Mexican-inspired main course ready in under an hour.

- 1 lb ground beef
- 1 medium onion
- 1 jalapeño
- 2 cloves garlic
- 15 oz can black beans
- 28 oz can enchilada sauce
- 12 corn tortillas
- 3 cups cheddar cheese, shredded
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1/4 cup (optional) cilantro
- 2 (optional) green onions
Instructions
- Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
- In a large skillet over medium heat, cook 1 pound ground beef until browned, about 5-7 minutes; drain excess fat.
- Add diced onion, minced jalapeño, minced garlic, cumin, chili powder, salt, and pepper to the skillet; sauté for 3-4 minutes until vegetables soften.
- Stir in drained and rinsed black beans and half of the enchilada sauce; simmer for 2 minutes to combine flavors.
- Spread a thin layer of remaining enchilada sauce on the bottom of the prepared baking dish.
- Arrange 6 corn tortillas in a single layer over the sauce, tearing as needed to fit.
- Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup shredded cheddar cheese.
- Repeat layers with remaining tortillas, beef mixture, and another cup of cheese.
- Pour remaining enchilada sauce over the top and sprinkle with the last cup of cheese.
- Bake for 20-25 minutes until cheese is melted and bubbly.
- Let casserole rest for 5 minutes before serving.
- Garnish with chopped cilantro and sliced green onions if desired.
