Cheesy Beef Enchilada Casserole

Layered with ground beef, tortillas, and a spicy enchilada sauce, this easy casserole bakes up bubbly and cheesy for a comforting Mexican-inspired main course ready in under an hour.

  • 1 lb ground beef
  • 1 medium onion
  • 1 jalapeño
  • 2 cloves garlic
  • 15 oz can black beans
  • 28 oz can enchilada sauce
  • 12 corn tortillas
  • 3 cups cheddar cheese, shredded
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/4 cup (optional) cilantro
  • 2 (optional) green onions

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  2. In a large skillet over medium heat, cook 1 pound ground beef until browned, about 5-7 minutes; drain excess fat.
  3. Add diced onion, minced jalapeño, minced garlic, cumin, chili powder, salt, and pepper to the skillet; sauté for 3-4 minutes until vegetables soften.
  4. Stir in drained and rinsed black beans and half of the enchilada sauce; simmer for 2 minutes to combine flavors.
  5. Spread a thin layer of remaining enchilada sauce on the bottom of the prepared baking dish.
  6. Arrange 6 corn tortillas in a single layer over the sauce, tearing as needed to fit.
  7. Spoon half of the beef mixture over the tortillas and sprinkle with 1 cup shredded cheddar cheese.
  8. Repeat layers with remaining tortillas, beef mixture, and another cup of cheese.
  9. Pour remaining enchilada sauce over the top and sprinkle with the last cup of cheese.
  10. Bake for 20-25 minutes until cheese is melted and bubbly.
  11. Let casserole rest for 5 minutes before serving.
  12. Garnish with chopped cilantro and sliced green onions if desired.
