Great way to use up some herbs and / or avocado that are nearing their final days
Creamy Avocado Greek Yogurt Herb Dip
A bright, tangy dip that blends creamy Greek yogurt with ripe avocado, fresh herbs, and citrus for a versatile sauce that doubles as a salad dressing or veggie dip, finished with optional everything bagel seasoning for crunch.
Ingredients
Ingredients
- 1 cups plain greek yogurt
- 1 ripe avocado
- 2 tbsp lemon juice
- 1 tbsp lime juice
- 1 cups mixed fresh herbs
- 2 garlic cloves
- 1 tsp salt
- 0.5 tsp black pepper
- 2 tbsp nutritional yeast
- 0.25 cups water
- 2 tbsp everything bagel seasoning
Instructions
- Add the Greek yogurt, avocado flesh, lemon juice, lime juice if using, herbs, garlic, salt, pepper, nutritional yeast if using, and water to a blender or food processor.
- Blend on high until completely smooth and creamy, scraping down the sides as needed.
- Taste and adjust seasoning with more salt, pepper, or citrus if desired.
- If the dip is too thick, blend in additional water a tablespoon at a time until it reaches your preferred consistency.
- Transfer the blended dip to a serving bowl.
- If using everything bagel seasoning, sprinkle it over the top and gently fold in just enough to distribute without fully incorporating for pockets of crunch.
- Serve immediately with fresh vegetables, crackers, or use as a salad dressing.
Notes
Use any soft herbs or greens on hand such as parsley, cilantro, dill, or spinach. The dip keeps well in the fridge for up to 3 days; stir before serving as it may thicken.
