Homemade Garlicky Caesar Dressing

- 1 unit large egg (room temperature)
- 1 unit garlic (peeled and minced)
- 1 unit fresh lemon juice
- 1 unit fresh lime juice
- 1 tsp white vinegar
- 1 tsp dijon mustard
- 1 cups avocado oil
- 1 to taste salt
Instructions
- Place the egg, white vinegar, Dijon mustard, avocado oil, and a pinch of salt into a tall, narrow jar or the container provided with your immersion blender in that specific order.
- Insert the immersion blender all the way to the bottom of the jar, ensuring the head of the blender encases the egg yolk.
- Turn the blender on high speed and keep it stationary at the bottom for 15–20 seconds until a thick, white emulsion forms.
- Slowly tilt and gently pull the blender upward through the remaining oil until fully incorporated and smooth.
- Add the minced garlic, fresh lemon juice, and fresh lime juice to the jar.
- Pulse or blend briefly to combine the aromatics and citrus into the emulsion.
- Taste the dressing and adjust the salt as needed.
- Transfer the dressing to an airtight container and store in the refrigerator for 5 to 7 days.
Notes
Using room temperature eggs is crucial for a stable emulsion. If the dressing is too thick, you can thin it out with a teaspoon of warm water at a time until you reach your desired consistency.
