These addictive crispy roasted chickpeas make a healthy, protein-packed snack with a perfect crunch, seasoned with garlic, salt, pepper, and a smoky blend of spices for bold flavor.

  • 2 cans (15 oz each) canned chickpeas
  • 2 tbsp olive oil
  • 2 cloves, minced garlic
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas thoroughly, then pat them dry with a clean kitchen towel or paper towels to remove excess moisture.
  3. In a large bowl, toss the chickpeas with olive oil, minced garlic, salt, black pepper, ground cumin, smoked paprika, and chili powder until evenly coated.
  4. Spread the chickpeas in a single layer on the prepared baking sheet.
  5. Roast in the preheated oven for 25-35 minutes, shaking the pan halfway through, until golden brown and crispy.
  6. Remove from the oven and let cool slightly before serving; they will crisp up more as they cool.

Notes

For extra crispiness, ensure chickpeas are very dry before roasting. Store in an airtight container at room temperature for up to 1 week; re-crisp in the oven if needed. Try adding rosemary or nutritional yeast for flavor variations.
