Yummy stir fry. Served over cauliflower rice with sesame seeds on top.
Chicken broccoli peanut stir fry

- 3 Lb chicken
- 3 Lb broccoli
- 2 onion
- 1 Head garlic
- 3/4 Cup peanut butter
- 1/2 Cup soy sauce
- 2 Tbs ginger (fresh)
- 3/4 Cup rice vinegar
- 1/2 Cup sesame oil
- 1/4 Cup sriracha
- 1/4 Cup maple
- sesame seeds (for topping)
- 1 Head napa cabbage
- garlic powder (as needed)
Instructions
- Cut chicken across grain into bite size pieces, soak in cornstarch, soy sauce, rice vinegar for 1 hr.
- Cook chicken in wok or pan with avocado oil.
- Chop all veg, start cooking in wok or pan in avocado oil (onion and garlic first, then broccoli, then cabbage).
- Toss in chicken.
- Mix all sauce ingredients, and dump sauce over stir fry once veggies are ~85% cooked. Add more garlic as needed. Let simmer for ~10 mins or more so everything soaks up the sauce.
- Serve over rice or cauliflower rice , sprinkle with sesame seeds and peanuts.
