Tomato, chickpea, spinach stew

Ingredients

  • 1 lb cherry tomato
  • 1 shallot
  • 1 bunch spinach
  • 2 cans chickpea
  • 2 Teaspoon turmeric
  • calabrian chili
  • salt
  • pepper
  • pesto
  • garlic

Instructions

  1. Sauté shallots with garlic
  2. Add in tomato, cover, and mush once softened
  3. Add chickpeas and spinach
  4. Add salt, pepper, turmeric, chili to taste and let simmer
  5. Stir in some pesto (optional)
  6. Serve with toasted bread / rice / pita :)
