Not the cutest looking meal, but boy was it hearty!
Tomato, chickpea, spinach stew
Ingredients
- 1 lb cherry tomato
- 1 shallot
- 1 bunch spinach
- 2 cans chickpea
- 2 Teaspoon turmeric
- calabrian chili
- salt
- pepper
- pesto
- garlic
Instructions
- Sauté shallots with garlic
- Add in tomato, cover, and mush once softened
- Add chickpeas and spinach
- Add salt, pepper, turmeric, chili to taste and let simmer
- Stir in some pesto (optional)
- Serve with toasted bread / rice / pita :)
