Banana Bread Blondies
Soft, chewy blondies with mashed banana for moisture and chocolate chips for bursts of sweetness.

- 1/2 cup unsalted butter, melted
- 1/2 cup packed light brown sugar
- 1/3 cup granulated sugar
- 1/3 cup banana, mashed
- 1 tsp vanilla extract
- 1 1/3 cups all-purpose flour
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2/3 cup chocolate chips
Instructions
- Preheat the oven to 350°F. Line an 8 x 8-inch pan with parchment paper. Set aside.
- In a large mixing bowl, add the melted butter, brown sugar, granulated sugar, mashed banana, and vanilla.
- Add the flour, baking powder, salt and cinnamon and use a rubber spatula to fold together until combined. Last, add the chocolate chips and fold to evenly distribute.
- Transfer the batter into the prepared pan and use the spatula to spread it evenly to the edges. Bake until the edges are set, the bars are starting to turn a light golden brown and a knife inserted into the center comes out with just a few moist crumbs, 20 to 22 minutes. Allow to cool slightly before slicing and serving.
Notes
in my oven, took more like 30-35 minutes
