This refreshing green cabbage slaw features bright Middle Eastern flavors like lemon, sumac, and fresh herbs, providing a crunchy, tangy contrast to spiced shawarma chicken.

  • 1/2 head green cabbage
  • 1 small red onion
  • 1/2 cup fresh parsley
  • 1/4 cup fresh mint leaves
  • 1/4 cup lemon juice
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1 tsp ground sumac
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Shred the green cabbage finely using a mandoline or sharp knife and place it in a large mixing bowl.
  2. Thinly slice the red onion and add it to the bowl with the cabbage.
  3. Finely chop the fresh parsley and mint, then add them to the bowl.
  4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, sumac, salt, and black pepper to make the dressing.
  5. Pour the dressing over the cabbage mixture and toss everything thoroughly to combine.
  6. Let the slaw sit for 5-10 minutes to allow the flavors to meld, then serve alongside shawarma chicken.
