Middle Eastern Green Cabbage Slaw
This refreshing green cabbage slaw features bright Middle Eastern flavors like lemon, sumac, and fresh herbs, providing a crunchy, tangy contrast to spiced shawarma chicken.

- 1/2 head green cabbage
- 1 small red onion
- 1/2 cup fresh parsley
- 1/4 cup fresh mint leaves
- 1/4 cup lemon juice
- 3 tbsp olive oil
- 1 clove garlic
- 1 tsp ground sumac
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Shred the green cabbage finely using a mandoline or sharp knife and place it in a large mixing bowl.
- Thinly slice the red onion and add it to the bowl with the cabbage.
- Finely chop the fresh parsley and mint, then add them to the bowl.
- In a small bowl, whisk together the lemon juice, olive oil, minced garlic, sumac, salt, and black pepper to make the dressing.
- Pour the dressing over the cabbage mixture and toss everything thoroughly to combine.
- Let the slaw sit for 5-10 minutes to allow the flavors to meld, then serve alongside shawarma chicken.
