- 2.5 cups water

- 4 sheets nori sheets
- 8 oz fresh fish (like tuna or salmon)

Instructions
- Prepare sushi rice by rinsing it under cold water until the water runs clear.
- Combine rice and water in a pot, bring to a boil, then lower heat and simmer for 20 minutes.
- Remove from heat and let the rice sit covered for 10 minutes.
- Transfer rice to a large bowl and mix in rice vinegar, sugar, and salt while it's still warm.
- Allow the rice to cool to room temperature.
- Prepare fillings by slicing fresh vegetables and seafood into thin strips.
- Lay a sheet of nori on a bamboo sushi mat, shiny side down.
- Wet your hands and spread a thin layer of sushi rice over the nori, leaving a small border at the top.
- Place your desired filling ingredients in a line across the center of the rice.
- Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
- Seal the edge of the nori with a little water.
- Use a sharp knife to slice the roll into bite-sized pieces.
- Arrange sushi pieces on a platter and serve with soy sauce, wasabi, and pickled ginger.
