Healthy Banana Pancakes

Banana, cinnamon pancakes using steel cut oats. Note: Can half the recipe for smaller portion.

Ingredients

  • 3 medium ripe bananas, mashed
  • 4 large eggs
  • 1 cup steel cut oats
  • 2 tbsp peanut powder/butter
  • 2 tbsp almond flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • pinch salt

Berry chia jam

  • 1 Cup frozen berries
  • 2 Tbsp chia seeds
  • 1 Dash maple

Instructions

  1. Mash 3 medium ripe bananas. In a bowl, whisk the mashed banana, eggs, and vanilla until smooth.
  2. Add the oats, almond flour, peanut powder, baking powder, cinnamon, and salt. Mix just until combined — the batter should be thick but pourable.
  3. Heat a nonstick pan over medium heat and lightly grease it. Cook until golden, about 1–2 minutes per side.
  4. Stew berries in saucepan with chia seeds and dash of maple until jammu.
  5. Stack the pancakes and top with a sprinkle of cinnamon and maple syrup. Also top with berry chia jam.
