- 150 g sundried tomatoes

Instructions
- Bring a large pot of salted water to a boil.
- Add the gnocchi and cook according to package instructions until they float, about 2-3 minutes.
- Drain the gnocchi and set aside.
- Heat olive oil in a large skillet over medium heat.
- Sauté diced onions until they are translucent, about 5 minutes.
- Add chopped sundried tomatoes, olives, and capers to the skillet; cook for another 3-4 minutes.
- Stir in the cooked gnocchi, tossing gently to combine with the vegetables.
- Crumble feta cheese over the top and fold it in carefully until slightly melted.
- Add fresh arugula to the skillet, stirring until wilted.
- Season with salt, pepper, and a drizzle of olive oil before serving.
- Serve hot, garnished with more feta and arugula if desired.
