This easy gnocchi dish combines the rich flavors of sundried tomatoes, olives, and feta, creating a delightful dinner that is both comforting and impressive.

  • 500 g gnocchi
  • 150 g sundried tomatoes
  • 100 g olives
  • 1 piece onion
  • 30 g capers
  • 150 g feta cheese
  • 100 g arugula
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Add the gnocchi and cook according to package instructions until they float, about 2-3 minutes.
  3. Drain the gnocchi and set aside.
  4. Heat olive oil in a large skillet over medium heat.
  5. Sauté diced onions until they are translucent, about 5 minutes.
  6. Add chopped sundried tomatoes, olives, and capers to the skillet; cook for another 3-4 minutes.
  7. Stir in the cooked gnocchi, tossing gently to combine with the vegetables.
  8. Crumble feta cheese over the top and fold it in carefully until slightly melted.
  9. Add fresh arugula to the skillet, stirring until wilted.
  10. Season with salt, pepper, and a drizzle of olive oil before serving.
  11. Serve hot, garnished with more feta and arugula if desired.
